I was checking out this great site www.GreatAmericanSeafoodCookOff.com and came across the 5 finalists of the 2008 Great American Seafood cook off. The 5 scrumptious photos got me salivating like a dog on a hot day! My favourite of the five is the Texas Gulf Shrimp (over hominy cakes with heirloom tomato relish drizzled with prickly pear gastrique) created by Chef Mark Holley from Texas.

I like this recipe best because the ingredient listed Jumbo Shrimp and tomatoes, two of my favourite food The photo of 'Texas Gulf Shrimp' showcased this huge shrimp which totally stole my attention from the other four photos, and it looks simple and doable by a mediocre cook like me. Only, when I do try to re-create this dish, I might need to cut down on most of the other ingredients hehe… I’m not up to that standard just yet. It’s really fortunate that Sabah is rich with fresh and huge shrimps so there is no need to buy imported ones. I believe domestic seafood are fresher and more sustainable than an imported one, and these qualities are important to produce tasty seafood dishes. Otherwise, even the best recipe will taste and smell bad if cooked using stale seafood.
